
A light and delicious salad using frozen peas!
Ingredients
- 1 pound frozen peas, thawed by rinsing and draining well
- 2 stalks of celery, diced
- 2 scallions (green onions), diced
- Small handful of mint and parsley, chopped
- Juice of 1 lemon
- 3 Tbsp. olive oil
- Salt and pepper to taste
Directions
- Wash hands with warm water and soap.
- Mix all ingredients thoroughly and serve immediately.
