
Makes 8 tacos.
Ingredients
- 3 tablespoons olive oil
- 1 sweet potato, diced
- 1 red onion, diced
- 1 tablespoon taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 8 small tortillas
- Optional toppings: shredded cheese, shredded lettuce, avocado, diced tomatoes or salsa, cilantro, lime juice
Directions
- Wash hands with soap and warm water.
- Heat a skillet over medium high heat. Add the oil.
- Once hot, add the diced sweet potato and red onion.
- Sauté for about 15 minutes.
- Reduce the heat to medium and stir in the taco seasoning.
- Cook for 10 more minutes, or until the sweet potatoes are soft and cooked through.
- Add the black beans, toss to combine, and cook for 5 more minutes.
- Place potato and bean mixture on tortilla. Add your favorite toppings and enjoy!
